Creamy Risotto (Serves 4)

Ingredients:

  • 1 1/2 cups Arborio rice

  • 1/2 cup dry white wine

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 4 cups vegetable or chicken broth, kept warm

  • 1 cup fresh mushrooms, sliced (e.g., cremini or shiitake)

  • 1/2 cup parmesan cheese, grated

  • 2 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • Salt and pepper to taste



Prepare the Broth:

  1. Heat the vegetable or chicken broth in a separate pot and keep it warm over low heat. You'll be gradually adding this to the risotto.

Sauté Onion and Garlic:

  1. In a large, heavy-bottomed skillet or pan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and cook until it becomes translucent.

  2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Toast the Rice:

  1. Add the Arborio rice to the skillet and stir to coat it with the oil, onion, and garlic mixture. Toast the rice for 2-3 minutes until the edges become translucent.

Deglaze with Wine:

  1. Pour in the dry white wine and stir until most of the liquid has evaporated. This step adds a layer of flavor to the risotto.

Add Mushrooms:

  1. Stir in the sliced mushrooms and cook until they are softened and release their moisture.

Start Adding Broth:

  1. Begin adding the warm broth one ladle at a time to the rice mixture. Stir continuously and allow the liquid to be absorbed before adding more. Continue this process until the rice is creamy and cooked to al dente, which should take about 18-20 minutes.

Finish with Butter and Cheese:

  1. Once the rice is cooked, stir in the remaining tablespoon of olive oil, unsalted butter, and grated Parmesan cheese. Season with salt and pepper to taste.
